Mrs Elswood crowd-pleasing burgers recipe (serves 8):

A BBQ without a burger isn’t a BBQ worth having! Whether it’s a succulent beef burger or a punchy veggie one, these burgers are perfect to enjoy right off the barbecue.
Beef burger patty recipe (serves 4):
500g beef-mince
1 red onion, finely chopped or grated
1 clove of garlic, grated
1 tsp of smoked paprika
1 egg
Salt and pepper to season
Method:
- Break up the mince using a wooden spoon or your hands (just make sure to wash them afterwards!)
- Season the meat with salt, pepper and the smoke paprika
- Add in the onion and garlic, mixing everything together to all the ingredients have combined
- Add the egg and bring the mince meat mixture together, as the egg is your combining agent it’s important to ensure this is done thoroughly
- Divide the mixture into four and roll to about the size of tennis balls. With wet hands press the chunks into a traditional patty shape until about 3cm thick
- Place on a plate, covered with cling film and cool in the fridge for about 30 minutes or until it’s time to start cooking
Veggie burger patty recipe (serves 4):
1 can of chickpeas (approx. 400 grams), drained
1 red onion, finely chopped or grated
1 egg
1 lemon, juiced
1 handful of coriander, chopped
100g breadcrumbs
1 tsp ground cumin
Salt and pepper for seasoning
Method:
- In a food processor whizz together the chickpeas, lemon juice, egg, coriander, cumin and seasoning. Transfer to a bowl
- Add the breadcrumbs and red onion to the bowl and mix to combine all ingredients
- Divide the mixture into four chunks and roll to the size of tennis balls, with wet hands flatten the patties until they’re about 3cm thick
- Chill the patties in the fridge for at least 10 minutes before cooking
For the burger and topping:
8 burger bunsof your choice (we recommend brioche burger buns)
8 slices of tomato
1 red onion sliced into rings
A small handful of chopped lettuce
8 slices of mature cheddar
1 jar of Mrs. Elswood Burger gherkins
Mayonnaise or any other sauce of choice to finish
Cooking instructions:
- Heat your barbecue and brush the grill with oil
- Check with your guests as to whether those eating the veggie patties feel comfortable having the meat patties cooked at the same time, on the same grill. If they do follow the instructions as below. If not, cook the veggie patties first adhering to the times in step 5.
- Once heated, take your beef patties and place to one side of the grill, allowing them to start cooking
- Then place your veggie patties to the other side of the grill
- After about four or five minutes on the first side, flip the burgers and cook on the second
- Once the all the burgers are cooked and slightly charred – for extra flavour – add the cheese and wait until fully melted
- Once complete, it’s time to start assembling your burger!
Building the burger:
- Slice your brioche buns in half and smear mayonnaise on the top and bottom.
- Layer the lettuce, tomato and red onion on top of the bread and place the patties, hot off the grill, over the top of the salad
- To finish off, top the burger with a handful of Mrs Elswood Burger Gherkins and the top of the bun
- Enjoy!
TOP TIP: If you’re a true pickle-lover, try cutting up small chunks of pickles and adding them to the burger patties before cooking. This will give your patty a zingy flavour all the way through.
